I could have sworn I wrote a thread about whether it was a functional (rather than theoretical) difference between a USB 3 to Ethernet adapter and a Thunderbolt 2 to Ethernet adapter, but I can't find the hide

Then I posted Actually, and I'm just too blind to find it, or did I just think about it?

It looks like you didn't. You've discussed thunderbolt peripherals, and made ethernet troubleshooting for members. But no real overlap.

Maybe you posted in a thread where the discussion happened, or on another board? If you did not use the words "thunderbolt" or "ethernet" yourself, the search will not find anything. If you just commented on someone else's post.

Oh, and a TB -> Ethernet adapter should work better (by itself). As TB is serialized PCIe, the computer speaks to it like any other network adapter.

USB -> Ethernet adds a protocol switch. In practice, USB3 can be fast enough to absorb the conversion and hide any packet delay. So maybe I don't know the practical answer.

Exception: If you use the network card on a TB eGPU enclosure and you also use the graphics card, all the games are off. A GPU card carries the TB bus. I have hesitated to play video files from a USB drive connected to an eGPU box. The cheats disappeared if I unloaded the GPU or if I used a USB port on the Mac.

Well, you've answered both my questions!

Amazon has a nicely priced USB 3 gig adapter, but there are many negative reviews from Mac (and some Windows) users, so I was worried

No. I think it might be useful. Although Thunderbolt is not "all that," PCI nature makes it useful for many things. This is a good example.
