In a supporting document on how the Apple Card works, Apple states that exporting data from the Apple Card is not a feature offered at this time. From the document: "Export data from Apple Card to a financial app that Mint does not currently support."
And as far as I know, the feature is also iOS only. So your data is really locked away and you can't easily back it up either.
Basically, if you don't reject the provision, you lose some public claim against Goldman Sachs. Arbitration involves an arbitrator (not a judge) overseeing the case, and both parties have input on who the arbitrator may be. Goldman Sachs will pay arbitration fees and other costs.
Apple Card lets you use Business Chat to contact customer support quickly, so you can probably send them the information above to opt out.
