I do a little, want a smart house, but only to a degree. I just want the ability to control lights and certain appliances (ie air conditioners) and basically nothing else.

The lights would be tidy because they can turn on certain times of the day, so no one will see I'm not at home. Of course, you definitely don't want anything stupid as smart light bulbs, just want a smart outlet that is connected to the Internet, so everything I plug in will turn on at a touch of my iPhone. Turning on the air conditioner (I don't believe in central air, like cooling down an entire house is just stupid when I'm just in one room, not to mention that it takes forever and costly) in the living room 15 minutes before entering be fine.

Camera door bells are nice, but only want one that is not connected to the internet. Paying any form of subscription service is just stupid. Store all data only on local devices. No face recognition stuff either. Well, I lose some "benefits," but I'm okay with that.

No smart devices like everything from Amazon Alexa, Google Home or others. Real people are listening to what you are talking about, and speech data leaks become common now. Don't ask for recommendations here, just comment on the usefulness of a smart house.

If the doorbell camera is intended for safety in any way, local storage is self-destructive.

Very true. The burglar had to first know that there is local storage space for cloud storage, and then you actually find the storage unit, which can be anywhere in your house (which in my house is almost impossible to find). It is not an actual wire attached from the doorbell to the hard drive. All wireless connected.

In order for the system to be compromised, the intruder does not need a technically knowledgeable "beyond the box that looks worth stealing".

Also, an actual tech savvy burglar would cut my cable and sweep all my stations.

It may take some work to get the living room AC to come on. The typical window unit does not come on after a power outage, which a smart contact simulates. You may need a smart AC with either built-in hours or Internet enabled. You can also download and read the user manuals in advance, see if a device can be turned on after a power failure.

If a window unit can be connected to an external thermostat, you will be good at walking. Pull it through a relay and connect the relay into the smart socket.

A non-digital should return. Mechanical controls. But … are they still made? Everything I see in the stores is digital with remote controls.
